When perusing the market for produce last week, it occurred to me: why even cook veggies in the summertime? Find in-season greens (or reds or purples or…you get the picture), and toss them in a quick dressing for a bright meal that’s made in a matter of minutes. My produce pick? Juicy heirloom tomatoes. When dressed in bright citrus flavours and their favourite herb, basil, a simple salad is born that pairs just as perfectly with crostini as it does with grilled chicken or steak. Fast, easy and fresh, it’s everything I look for in a summer meal — and I think you’ll agree!
Heirloom Tomato Basil Salad (makes 4 – 5 side salads)
4 Heirloom tomatoes
Bunch of fresh basil
Juice and zest of half a lemon
1 tablespoon olive oil
Salt and pepper to taste
1. Chop heirloom tomatoes into chunks. Add to medium-sized bowl.
2. Remove leaves (about 20 – 30) from basil bunch, roll them up together and slice. Add to bowl.
3. Add lemon juice, zest and olive oil. Toss to incorporate.
4. Season with salt and pepper. Toss. Serve!
